To create this delightful agar-agar mango pudding, you will need the following ingredients: 

  • 2 ripe mangoes (peeled and chopped)
    • Tip: Look for mangoes that are soft to the touch for the best flavour.
  • 1 cup of milk
    • Tip: You can substitute coconut milk for a richer, dairy-free option.
  • 2 tablespoons of sugar
    • Tip: Adjust the sweetness to your preference; alternatives like honey or maple syrup work well too.
  • 1 packet of agar-agar (approximately 3 teaspoons)
    • Tip: Ensure it is in powdered form for easy use.
  • 1 cup of water
    • Tip: This is for dissolving the agar-agar before mixing with the other ingredients.

For 500 ml (milk + water) no need of 1 packet agar, need only 1-2 tsp

How to Make Mango Pudding

 

Step 1: Blend the Mangoes

Start by peeling & chopping the ripe mangoes into small pieces. Drop the mango slices in a blender or food processor and blend until smooth. You can also strain the puree through a fine mesh sieve, if required, to remove any fibrous bits for a silkier texture.

Step 2: Prepare the Agar-Agar

Gather a small saucepan. In it, combine 1 cup of water with the agar-agar. Heat the cool mixture over medium heat, stirring constantly. Bring the mixture to a gentle, full boil and then let it simmer for about 5 minutes or until the agar-agar is completely dissolved. Remove the saucepan gently from atop the heat source and allow it to cool slightly.

Step 3: Mix with Milk and Sugar

In a mixing bowl, combine the dissolved agar-agar mixture with 1 cup of milk (or coconut milk) and 2 tablespoons of sugar. Whisk this uneven mixture thoroughly until the sugar is fully dissolved and the mixture looks and feels smoothened. If you're planning on using honey or maple syrup, add them at this stage. 

Step 4: Combine and Chill

Gently fold the mango puree into the milk mixture, being careful not to overmix. The goal is to combine the flavours without losing the airy texture. Once combined, pour the mixture into individual serving cups or a large mould. Refrigerate for at least 2 hours or until the pudding is set and firm to the touch.

Step 5: Serve and Enjoy

Once the pudding is set, you can garnish it with fresh mango slices, a sprinkle of toasted coconut flakes, or a sizable dollop of whipped cream, for an added touch. Serve chilled and enjoy the delightful burst of tropical flavours with every spoonful!

Recipe is wrong – you need to combine agar along with water and boil until the agar dissolves completely. After that you need to add other ingredients and mix it in the heat only.
