COFFEE CAVIAR WITH PURE REFINED KAPPA CARRAGEENAN

Ingredients

 

  • For coffee Boba / coffee caviar                                             
  • Brewed coffee-250ml                     
  • Sugar-50gms
  • Carrageenan powder-1 teaspoon
  • Chilled oil-1 cup

 

 Preparation

 

  • In a sauce pan, add brewed coffee, sugar , carrageenan powder , mix it well and then transfer it over stove.
  • Let it boil for few minutes for the carrageenan to activate
  • Transfer into a squeeze bottle after 10 minutes
  • Slowly stream the coffee caviar mix into the chilled oil
  • Strain the pearls and rinse them 5-6 times with cold water
