Meron’s Calcium lactate can be prepared by the reaction of lactic acid with calcium  carbonate or calcium hydroxide . It is a food additive that’s typically added to a wide variety of foods to enhance their texture and flavour or help extend their shelf life. Meron’s Calcium Lactate Powder can be widely used in molecular gastronomy as a flavourless fat soluble agent for plain and reverse spherification.

Sodium Alginate is the sodium salt form of alginic acid and gum mainly extracted from the cell walls of brown algae, with chelating activity. Alginates are known for their liquid–gel behavior in aqueous solutions. It is also widely used in molecular gastronomy. It is a white powder, odourless and tasteless, slowly soluble in water forming a viscous solution
