CHIA SEED DRINK WITH GELLAN GUM

INGREDIENTS                                         

Gellan gum                                                  0.4 grams

Water                                                            120 ml

Chia seed                                                     1.5 grams

Sugar                                                             11 grams

sodium citrate                                               0.1

Food Colour & Flavours                               As required 

PREPARATION

  • Add Gellan gum and sugar into the water and heat it until it dissolve completely in 80 to 85°C about 25-30 min.
  • Turn off the flame and add colour & flavour .
  • Add sodium citrate and mix well.
  • Let the temperature down to 50 –600c and add chia seed.
  • When it is completely swelled stir it well .
  • Pour it into the bottle and for better taste keep it refrigerated.

pH: 3.3-3.6 Brix: 110- 130

Note: Maintain the pH of final product to 3.4-3.6. (if the pH is greater than 3.6 or less than 3.4 the suspension will not occur)
