Ingredients
- Digestive biscuits - 200 grams
- Melted butter - 100 grams
- Cream cheese - 300 grams
- Icing sugar - 1⁄2 cup
- Whipped cream - 200ml
- Meron Spreadable agar agar - 2 tsp
- Milk - 1⁄4 cup
- Biscoff spread - 1 jar
Preparation
- Crush the digestives until a fine powder is formed and add in the melted butter. Mix well and transfer into a lined dish. Press down until well packed and refrigerate for 10 minutes.
- Into a bowl, add in the cream cheese along with icing sugar and half jar of biscoff spread.
- Whip until well combined and add in the whipped cream and fold until a homogenous mixture is formed.
- Into a saucepan with milk, add in 2 tsp of Meron’s spreadable agar agar and
mix well. - Simmer on low heat for 2 minutes. mix well until the wondergel
dissolves completely. - Pour this into the cheesecake mixture and whip again until well combined.
- Pour this into the baking dish lined with digestives.
- Refrigerate for a minimum of 4 hours.
- Top it off with the rest of the biscoff spread and refrigerate again for another hour.
